Here’s a tasty Jalapeño Chicken recipe that’s easy to make and full of flavor:

Table of Contents

  • 4 boneless, skinless chicken breasts
  • 2-3 jalapeño peppers, sliced (remove seeds for milder heat)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro or parsley, chopped (for garnish)

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a mixing bowl, combine the cream cheese, mayonnaise, Parmesan cheese, minced garlic, smoked paprika, salt, pepper, and cayenne pepper (if using). Mix until well combined.
  3. Butterfly each chicken breast by slicing horizontally almost all the way through, then open them up like a book.
  4. Spread a layer of the cream cheese mixture inside each chicken breast.
  5. Place a few slices of jalapeño peppers on top of the cream cheese mixture.
  6. Fold the chicken breast back over the filling and secure with toothpicks, if needed.
  7. Place the stuffed chicken breasts in the prepared baking dish.
  8. Sprinkle the shredded cheddar cheese over the top of the chicken breasts.
  9. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Remove the toothpicks and garnish with chopped cilantro or parsley before serving.

Serve your Jalapeño Chicken with rice, salad, or your favorite side dish. Enjoy the spicy, cheesy goodness!
