Ingredients:
- 1 cup of flour
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of softened butter
- 3/4 cup of packed brown sugar
- 1/2 cup of creamy peanut butter
- 1 teaspoon of vanilla extract
- 1 large egg
- 3/4 cup of old-fashioned rolled oats
- 3/4 cup of semi-sweet chocolate chips (see notes)
Instructions:
- Preheat your oven to 350 degrees Fahrenheit. Line your baking sheets with parchment paper or silicone baking mats.
- In a medium-sized bowl, mix together the baking soda, flour, and salt. Set this mixture aside.
- Using a mixer set to medium speed, cream together the softened butter and packed brown sugar until the mixture becomes light and fluffy. Then, lower the mixer speed and add in the peanut butter and vanilla extract. Mix until everything is just incorporated. Add the egg and mix until just incorporated.
- Gradually add the flour mixture to the butter mixture in three parts, mixing until just combined after each addition. Once combined, stir in the rolled oats and chocolate chips.
- Using a cookie scoop or tablespoon, drop the dough onto your prepared baking sheets, spacing them out evenly.
- Bake the cookies at 350 degrees Fahrenheit for 10-12 minutes, or until they are lightly browned around the edges.
- Allow the cookies to cool on the baking sheets for 5-7 minutes before transferring them to wire racks to cool completely. Enjoy your delicious peanut butter oatmeal cookies!
