Instructions

Make the Filling (15 minutes)

In a large skillet over medium heat, cook 1 lb sausage until browned and cooked through (6–7 minutes). Remove and set aside.

In the same skillet, melt 2 tbsp butter.

Whisk eggs with milk, salt, and pepper, then pour into skillet.

Cook, stirring gently, until just set (4–5 minutes).

Stir in cooked sausage and both cheeses. Remove from heat.

Assemble the Enchiladas (5 minutes)

Divide filling evenly between tortillas.
