Ingredients (Serves 6–8)
For the Filling:
8 large flour tortillas (8-inch size)
1 lb breakfast sausage (pork or turkey)
8 large eggs
½ cup milk
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Salt & pepper, to taste
2 tbsp butter
For the Sausage Gravy:
½ lb breakfast sausage (can use the same type as in filling)
4 tbsp unsalted butter
4 tbsp all-purpose flour
3 cups whole milk (warm)
½ tsp black pepper
Salt, to taste
Instructions
Make the Filling (15 minutes)
In a large skillet over medium heat, cook 1 lb sausage until browned and cooked through (6–7 minutes). Remove and set aside.
In the same skillet, melt 2 tbsp butter.
Whisk eggs with milk, salt, and pepper, then pour into skillet.
Cook, stirring gently, until just set (4–5 minutes).
Stir in cooked sausage and both cheeses. Remove from heat.
Assemble the Enchiladas (5 minutes)
Divide filling evenly between tortillas.
Roll up each tortilla and place seam side down in a greased 9×13-inch baking dish.
Make the Sausage Gravy (10 minutes)
In a skillet, cook ½ lb sausage until browned.
Add butter and let it melt.
Sprinkle in flour and cook for 1 minute, stirring constantly.
Slowly whisk in warm milk until smooth.
Season with pepper and salt to taste. Simmer 3–4 minutes until thickened.
Bake Until Bubbly (25–30 minutes)
Pour sausage gravy evenly over enchiladas in the baking dish.
Cover loosely with foil and bake at 350°F (175°C) for 20 minutes.
Remove foil and bake an additional 5–10 minutes until hot and bubbly.
Serve (5 minutes)
Let rest 5 minutes before serving.
