Ingredients:
– 900g / 2 lbs Beef
– 200g / 7 oz Bacon
– 400g / 14 oz Mushrooms
– 3 tbsp Unsalted Butter
– 1 Onion
– 3 Carrots
– 1 tbsp Tomato paste
– 6 Garlic cloves
– 2 tbsp Flour
– 2 cups / 500 ml Red wine
– 2 cups / 500 ml Beef stock or Water
– 1 tsp Salt
– 1 tsp Thyme
– 1/2 tsp Black pepper
– 2 Bay leaves
Instructions:
1. Cut beef into chunks, season with salt and pepper.
2. In a large pot, melt butter and cook bacon until crispy.
3. Add beef and brown on all sides. Remove from the pot.
4. Sauté onions, carrots, and garlic until softened.
5. Sprinkle flour and tomato paste, stir.
6. Return beef and add red wine, beef stock, thyme, and bay leaves.
7. Simmer for 2-3 hours until beef is tender.
8. In another pan, sauté mushrooms in butter until golden.
9. Add mushrooms and simmer for 15 more minutes.
10. Serve hot, garnished with fresh herbs.
