This Cheesy Potato Egg Skillet Cake is the ultimate comfort food—crispy on the outside, soft and fluffy inside, and loaded with gooey melted cheese. Made with simple ingredients like potatoes, eggs, and cheese, it’s perfect for breakfast, brunch, or even a quick dinner. Cooked in a skillet for that golden crust, every slice delivers rich, savoury flavour and irresistible texture.
Ingredients
•3–4 medium potatoes (peeled and grated)
•3 large eggs
•1 cup shredded cheese (cheddar, mozzarella, or mix)
•1/4 cup milk
•1/4 cup onion (finely chopped)
•2 tbsp green onions (chopped)
•1/2 tsp garlic powder
•Salt & black pepper to taste
•2 tbsp butter or oil (for cooking)
Instructions
Start by preparing the potatoes. Peel and grate them using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This step is important to achieve a crispy texture.
In a large mixing bowl, combine the grated potatoes, eggs, milk, shredded cheese, chopped onion, green onions, garlic powder, salt, and pepper. Mix everything well until fully combined into a thick batter.
Heat a large non-stick or cast-iron skillet over medium heat and add butter or oil. Once hot, pour the potato mixture into the skillet and spread it evenly, pressing it down gently to form a flat, cake-like shape.
Cover the skillet and cook for about 10–12 minutes on medium-low heat. This allows the bottom to become golden brown and crispy while the inside cooks through.
Carefully flip the cake using a large plate or lid. Slide it back into the skillet and cook the other side for another 8–10 minutes until golden and fully cooked.
Once done, remove from the skillet and let it rest for a few minutes before slicing.
Serve warm, topped with extra herbs, sour cream, or your favorite dipping sauce.
