Ingredients
Crab Layer
- 1 cup lump crab meat (fresh or canned, drained)
- 2 tbsp mayonnaise or Greek yogurt
- 1 tsp Dijon mustard
- 1 tbsp lemon or lime juice 🍋
- Salt & black pepper to taste
Avocado Layer
- 2 ripe avocados (diced) 🥑
- 1 tbsp lime juice
- Salt to taste
- Mango Layer
- 1 cup mango (diced) 🥭
- 2 tbsp red bell pepper (finely chopped)
- 1 tbsp red onion (finely chopped)
- 1 tbsp cilantro (chopped) 🌿
Lime-Cilantro Vinaigrette
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey
- 1 tbsp cilantro (chopped)
- Salt & pepper to taste
Instructions
- Prepare crab mixture:
In a bowl, mix crab meat, mayo (or yogurt), mustard, lime juice, salt, and pepper. Chill. - Prepare avocado layer:
Toss diced avocado with lime juice and a pinch of salt. - Prepare mango mixture:
Combine mango, bell pepper, onion, and cilantro. - Make vinaigrette:
Whisk olive oil, lime juice, honey, cilantro, salt, and pepper. - Assemble towers:
Using a ring mold (or small bowl), layer:- Avocado (bottom)
- Crab mixture (middle)
- Mango topping (top)
- Finish:
Gently remove mold and drizzle vinaigrette around and over towers.
