 Ingredients

 Main:

  • 1 1/2 lbs chicken thighs (boneless, skinless)
  • 1 cup jasmine rice (rinsed) 🍚
  • 1 can (13.5 oz) full-fat coconut milk 🥥
  • 2 cups chicken broth
  • 1 small onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt & black pepper to taste
  • 1 tbsp olive oil

 Optional Garnish:

  • Fresh cilantro
  • Lime wedges 🍋
  • Chilli flakes 🌶️

 Instructions

  1. Sear chicken:
    Heat oil in a large pot. Season chicken with salt and pepper, then sear for 4–5 minutes per side until lightly golden. Remove and set aside.
  2. Sauté aromatics:
    In the same pot, cook onion, garlic, and ginger for 2–3 minutes until fragrant.
  3. Add spices:
    Stir in turmeric, cumin, and paprika. Cook for 1 minute to release flavour.
  4. Add liquids & rice:
    Pour in coconut milk and chicken broth. Add rinsed rice and stir.
  5. Simmer:
    Return chicken to the pot. Cover and simmer on low heat for 20–25 minutes until rice is tender and chicken is cooked through.
  6. Rest & fluff:
    Let sit for 5 minutes, then fluff rice gently.
  7. Serve:
    Garnish with cilantro, lime, and chilli flakes.
