Ingredients
Main:
- 1 1/2 lbs chicken thighs (boneless, skinless)
- 1 cup jasmine rice (rinsed) 🍚
- 1 can (13.5 oz) full-fat coconut milk 🥥
- 2 cups chicken broth
- 1 small onion (finely diced)
- 3 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp paprika
- Salt & black pepper to taste
- 1 tbsp olive oil

Instructions
- Sear chicken:
Heat oil in a large pot. Season chicken with salt and pepper, then sear for 4–5 minutes per side until lightly golden. Remove and set aside. - Sauté aromatics:
In the same pot, cook onion, garlic, and ginger for 2–3 minutes until fragrant. - Add spices:
Stir in turmeric, cumin, and paprika. Cook for 1 minute to release flavour. - Add liquids & rice:
Pour in coconut milk and chicken broth. Add rinsed rice and stir. - Simmer:
Return chicken to the pot. Cover and simmer on low heat for 20–25 minutes until rice is tender and chicken is cooked through. - Rest & fluff:
Let sit for 5 minutes, then fluff rice gently. - Serve:
Garnish with cilantro, lime, and chilli flakes.
