Potato and Egg Dish with Guacamole Sauce
Ingredients:
For the Potato and Egg Dish:
- 2 large potatoes (450g / 16 oz)
- 3 carrots (300g / 10 oz)
- Spring onions
- 2 eggs
- 4 tablespoons starch
- 4 tablespoons flour
- A bunch of cilantro and parsley
- 1 tablespoon olive oil
- 500ml vegetable oil (17 fl.oz) for frying
- Salt and black pepper to taste
For the Guacamole Sauce:
- 1 avocado
- 1 tomato
- A bunch of cilantro and parsley
- 1 clove of garlic
- 1/3 pepper, finely chopped
- Juice of 1/2 lime
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions:
- Peel and grate the potatoes and carrots.
- Squeeze out any excess liquid from the grated potatoes
- Add chopped spring onions, eggs, starch, flour, cilantro, parsley, olive oil, salt, and black pepper to the grated mixture. Mix well.
- Heat vegetable oil in a pan for frying.
- Spoon portions of the potato mixture into the hot oil and flatten them into patties. Fry until golden brown and crispy on both sides. Drain on paper towels.
- For the Guacamole Sauce, mash the avocado and mix it with diced tomato, cilantro, parsley, garlic, chopped pepper, lime juice, olive oil, salt, and black pepper.
- Serve the potato and egg patties with a dollop of guacamole sauce on top.
