Potato and Egg Dish with Guacamole Sauce

Ingredients:

For the Potato and Egg Dish:

  • 2 large potatoes (450g / 16 oz)
  • 3 carrots (300g / 10 oz)
  • Spring onions
  • 2 eggs
  • 4 tablespoons starch
  • 4 tablespoons flour
  • A bunch of cilantro and parsley
  • 1 tablespoon olive oil
  • 500ml vegetable oil (17 fl.oz) for frying
  • Salt and black pepper to taste

For the Guacamole Sauce:

  • 1 avocado
  • 1 tomato
  • A bunch of cilantro and parsley
  • 1 clove of garlic
  • 1/3 pepper, finely chopped
  • Juice of 1/2 lime
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions:

  1. Peel and grate the potatoes and carrots.
  2. Squeeze out any excess liquid from the grated potatoes
  3. Add chopped spring onions, eggs, starch, flour, cilantro, parsley, olive oil, salt, and black pepper to the grated mixture. Mix well.
  4. Heat vegetable oil in a pan for frying.
  5. Spoon portions of the potato mixture into the hot oil and flatten them into patties. Fry until golden brown and crispy on both sides. Drain on paper towels.
  6. For the Guacamole Sauce, mash the avocado and mix it with diced tomato, cilantro, parsley, garlic, chopped pepper, lime juice, olive oil, salt, and black pepper.
  7. Serve the potato and egg patties with a dollop of guacamole sauce on top.
